Wine produced from a 1.50 ha vineyard located at 100 meters above sea level, the present soil is of clay mixed with marly calcareous flysch while the climate is of a temperate Mediterranean type. The density of the plant is 4500 plants per hectare with a yield of about 80 quintals. Pruning is carried out with spurred cordon and simple guyot, the grape harvest is exclusively manual. The average age of the plant is 15 years. The vinification takes place for 50% in steel and for 50% in new barriques, of second and third passage, the half vinified in wood is aged for 8 months in barriques. Aging is 6 months in the bottle.

Pairings: It goes well with all fish-based preparations and thanks to its softness and aroma it has a good relationship with Tuscan appetizers of crostini and salami. Also try it with veal fricassee and soft cheeses.
